About FARECheck

FARECheck is a training and audit program for food allergen handling, preparation and training. For millions of Americans, dining away from home can be stressful and challenging because one bite of a food allergen can have potentially life-threatening consequences.

In keeping with FARE’s mission to improve the quality of life and health of individuals with food allergies, FARE has developed FARECheck to help provide an additional layer of education and awareness around food allergies and anaphylaxis among the hundreds of thousands of workers across the country who serve the food allergy community.

FARECheck Trained

Awarded when an individual staff member has completed on-demand or instructor-led training provided by FARE or a third-party allergen training program reviewed and certified by FARE

FARECheck Silver

Awarded when at least 90 percent of a food establishment’s workforce has been trained in food allergy safety

FARECheck Gold

Awarded when, in addition to achieving FARECheck Silver status, food establishments also undergo a food service policy review and an annual onsite audit

Your Allergy Chefs

Your Allergy Chefs is owned and operated by Joel & Mary Schaefer, two of the country’s foremost experts on special diets & allergies in foodservice, hospitality, restaurants, and catering. Joel & Mary are devoted to providing tips, guidance, and resources if you, or someone you love, are coping with food allergies or intolerances.

In Joel’s role as Culinary Development and Special Dietary Needs Manager for Walt Disney World Resort, he was responsible for developing the food allergy and special diets program for Disney properties worldwide and Disney Cruise Line.

Mary has been in pastry most of her life. In fact, she was pastry chef at Disney’s Contemporary Resort for ten years. Imagine her surprise when three years ago she was diagnosed with Hashimoto’s thyroiditis. She had to immediately give up gluten and dairy. Mary was also diagnosed with soy, peanut, and almond intolerances.
